Sous Vide Egg Bites (Starbucks copycat recipe)
Ingredients
Melted butter
6 eggs
1/2 c. grated gruyere
1/4 c. neufchatel/cream cheese/dairy free cream cheese option
1/4 tsp. salt
3 slices cooked bacon, cut into small pieces (ratio of 1/2 slice per egg bite)
Extra Equipment: 6 -- 4oz/125ml canning jars with 2-part screw-on lids
Directions
Set sous vide circulator to 172F
Mix eggs, cheeses, and salt in a blender or food processor.
Cook bacon in frying pan or oven, but don't blot it dry. The tiny bit of grease adds flavor!
Place pieces of bacon in bottom of butter-greased small Ball jar.
Pour 1/3 cup of egg/cheese mixture into jar.
Top with more bacon.
Seal finger-tight (but no tighter, lest the air pressure break the jar)
Place into sous vide for 1 hour.
Remove from sous vide, allow to briefly cool before either removing egg bite (with a knife, around the edge of the egg bite, then prying it loose, then turning over and emptying jar) and putting into refrigerator.
When ready to eat, microwave for 20-30 seconds, place in oven or under broiler. May blowtorch if caramelization is desired.
Can double or even quadruple recipe, as desired.Â

Experimental Mexican egg bite w/egg, jack cheese, chorizo and chopped fresh jalapenos (no seeds)
