Sous Vide Shrimp - Larry Pile

  • 1 lb. peeled and deveined raw shrimp

  • Butter

  • Salt and pepper

  • A pinch of baking soda


  • Set the sous vide at 120F

  • Wash the shrimp and place in a single layer in the vacuum back, after seasoning with salt and pepper.

  • Add a pat of butter and a pinch of the baking soda to the shrimp and seal, keeping the package as flat as possible.

  • Sous vide at 120F for 20-25 minutes until shrimp turns pink and is cooked.

  • Remove, pat dry and sear in a hot skillet for 30 seconds per side.

  • Serve or reserve for a salad, snacks, etc.
